KALI'S COOKIN'

Kali Robins is the chef extraordinaire for our BC adventures. Using local and organic ingredients whenever possible, Kali prepares incredible, hearty meals with active mountain bikers in mind.

Over the summer we'll post some of Kali's and other recipes here.


Sol's Granola Bar's

Mix 3 cups oats, 1/2 cup coconut, 1/2 cup nuts or sunflower seeds, 1/2 cup wheat germ or bran, 1/2 cup raisins or craisins, 2 tbsp. sesame seeds and 1/2 cup chocolate chips in a large bowl.  In separate bowl mix 1 cup brown sugar, 1 cup peanut butter, 3/4 corn syrup, 1/2 cup melted butter and  2 tsp. vanilla.  Combine all ingredients and mix well.  Pat into greased 9x13 inch pan and bake at 350 degree's farenheight for 20 to 25 minuts.  The key is not to over bake or the cake becomes dry,   Mix up the dry nuts, seeds and fruit but keep the mesurements the same.  Cool, cut, pack and enjoy!


ENERGY BARS (from The Thrive Diet© by Brendan Brazier)

Chocolate Blueberry Energy Bars
1 cup fresh or soaked dried dates
1/4 cup almonds
1/4 cup blueberries
1/4 cup roasted carob powder (or cacao)
1/4 cup ground flaxseed
1/4 cup hemp protein
1/4 cup unhulled sesame seeds
1 tsp fresh lemon juice
1/2 tsp lemon zest
sea slat to taste
1/2 cup sprouted or cooked buckwheat (optional)
1/2 cup frozen blueberries

process all ingredients except buckwheat and blueberries in a food processor. Knead buckwheat and blueberries into mixture by hand.

makes approxmately 12 1 - 3/4 oz. bars


Ginger Pear Energy Bars

1 small pear, cored
4/3 cup fresh or soaked dried dates
1/2 cup sunflower seeds
1/4 cup ground flaxseed
1/4 cup hemp flour
1/4 cup walnuts
2 tbsp grated fresh ginger
sea slat to taste
2 tbsp sesame seeds

prcoess all ingredients except sesame seeds. Cover mixture in sesame seeds before cutitng into bars.


Banana Bread Energy Bars

1 small banana
3/4 cup fresh or soaked dried dates
1/2 cup popped Amaranth
1/2 cup walnuts
1/4 cup ground sesame seeds
2 tsp cinnamon
1/2 tsp nutmeg
sea salt to taste


Mango Coconut Energy Bars

3/4 cup fresh or soaked dried dates
1/2 cup ground flaxseed
1/2 cup chopped mango
1/2 cup soaked or cooked quinoa
1/4 cup macadamia nuts
1 tsp cinnamon
1 tsp lemon zest
sea salt to taste
1/4 cup shredded coconut

prcess all ingredients except coconut. Work coconut into mixture by hand


Citru Papaya yerba Maté Energy Bars

zest of 1/2 lemon
zest of 1/4 lime
2 strips dulse (about 1/4 cup, tightlty packed)
3/4 cup fresh or soaked dried dates
1/2 cup chopped papaya
1/2 cup popped amaranth
1/2 cup ground flaxseed
1/4 sunflower seeds
1 tbsp buckwheat flour
2 tsp groun yerba mate
2 tsp agave nectar


Apple Cinnamon Energy Bars

1 small apple, cored
1 cup fresh or soaked dried dates
1/2 cup soaked or cooked quinoa
1/4 cup almonds
1/4 cup ground flaxseed
1/4 cup hemp flour
2 tsp cinnamon
1/2 tsp nutmeg
sea salt to taste
